Cauliflower Power

I eat vegetables.  It never used to be that way.  I actually hated vegetables until my now husband started coaxing me to try veggies again.  My mom used to overcook all veggies until they were mush.  I've learned to steam my veggies and much prefer the taste.  I'm a firm believer in cooking your veggies different ways until you find a way that the kiddos like them.  If they don't like carrots, make carrots 5 nights in a row, but prepare them with different seasonings or cooking methods each night.  Your kids are bound to like them one way.  I want to share my new favorite veggie recipe.  My mom made it last week and I am hooked.


Ingredients
4 cups of cauliflower tops
2 Tbls olive oil
garlic powder
oregano

Simply steam cauliflower for 8 minutes.  Remove from heat.  In a non-stick pan heat olive oil over med-high heat.  Add cauliflower to hot pan and add a few shakes of garlic powder and oregano.  Cook for 3 more minutes or until you see the cauliflower browning.  Serve hot and season with salt and pepper as desired.

Strawberry Cheesecake Pinwheels

Ingredients

  • 4oz cream cheese, softened
  • 2 Tbsp butter, softened
  • 3 tsp brown sugar
  • 4 Tbsp strawberry jam (apprx.)
  • 1 pie crust
  • cinnamon sugar
Directions

Preaheat oven to 450º
Cream butter, cream cheese and brown sugar.  Set aside.  Roll out softened pie crust and top with jam.  Spread evenly over crust.  Spread cheese mixture on top of jam.  Roll pie crust.  Slice roll into 1" pieces and place on Silpat or parchment paper.  Leave room between each roll.  Sprinkle with cinnamon sugar.  Bake at 450º for 20 minutes.  Remove Silpat and cool on a cooling rack.  Serve pinwheel on top of vanilla ice cream and drizzle with more jam.  Enjoy while still warm!
