Strawberry Cheesecake Pinwheels

Ingredients

  • 4oz cream cheese, softened
  • 2 Tbsp butter, softened
  • 3 tsp brown sugar
  • 4 Tbsp strawberry jam (apprx.)
  • 1 pie crust
  • cinnamon sugar
Directions

Preaheat oven to 450º
Cream butter, cream cheese and brown sugar.  Set aside.  Roll out softened pie crust and top with jam.  Spread evenly over crust.  Spread cheese mixture on top of jam.  Roll pie crust.  Slice roll into 1" pieces and place on Silpat or parchment paper.  Leave room between each roll.  Sprinkle with cinnamon sugar.  Bake at 450º for 20 minutes.  Remove Silpat and cool on a cooling rack.  Serve pinwheel on top of vanilla ice cream and drizzle with more jam.  Enjoy while still warm!

  3. Oh my goodness... this looks absolutely DELICIOUS!!! I am ashamed to say that I am a very, very lousy cook (my husband does the cooking... but he absolutely LOVES it, so it's ok), and I am definitely going to pass on this recipe to him! Yum-O!
